Three Braces-Friendly Summer Dishes Worth Trying

The Peppermint Lemonade

One thing that has become a necessity every summer is the sweet and tangy taste of lemonade. The juice is popular because it has a magical way of cooling you down when you feel like the heat simply cannot get any worse. The only thing this recipe does is enhance the drink a bit by adding a dash of peppermint.

You are going to need the following:

  • One, 12 ounce can of lemonade concentrate, sometimes found in the frozen aisle
  • 1 beautifully yellow lemon
  • 1/4 cup of unrefined sugar
  • 1/2 cup of fresh mint leaves

 

Follow the steps below:

  1. Pour the lemonade concentrate into a large cooler or whatever container you want to use; just make sure it can handle about a gallon of liquid.
  2. Add enough water into the concentrate to make a full gallon of juice.
  3. Grate the zest from your lemon, and add it into the container. Then, simply squeeze the juice out of the lemon and pour it into the container.
  4. Crush the mint leaves into the sugar, or use a food processor to blend the two together.
  5. Stir the sugar and mint. Blend into your lemonade, and chill until you are ready to drink.

 

Pasta Fredda

Pasta is a great dish for the summer since it is so quick to cook and this particular recipe includes veggies that will leave you refreshed in the hot heat.

You’ll need the following ingredients:

  • 8 ounces of your favorite bow tie pasta
  • 20 halved cherry tomatoes
  • 7 ounces of bocconcini
  • 3/4 cup of black olives
  • 2 tablespoons of olive oil
  • 6 basil leaves
  • 1/2 teaspoons of oregano leaves

Follow these steps to make your pasta:

  1. Cook your pasta as you would normally, or follow the directions in the package.
  2. Combine the rest of the ingredients in a bowl, and taste to make sure it is to your liking.
  3. Toss the hot and ready pasta in with your sauce, and you are done.

 

Chicken Enchiladas

Enchiladas are a delicious meal and a simple one, too. This dish is unique and great for those who enjoy trying new recipes!

You’ll need the following ingredients:

  • 1 tablespoon of butter
  • 1/2 cup of chopped green onions
  • 1/2 teaspoon of garlic powder
  • One, 4 ounce can of diced green chiles
  • One, 10.75 ounce can of cream of mushroom soup
  • 1/2 cup of sour cream
  • 1 1/2 of cubed and cooked chicken breast
  • 1 cup of shredded Cheddar
  • 6 tortillas, flour or corn
  • 1/4 cup of milk

 

You’ll need to follow the steps below:

  1. Preheat your oven to 350 degrees.
  2. Prepare a large baking sheet by greasing it.
  3. In a saucepan, over medium heat, start cooking the butter. Add the green onion for about four minutes or a little less.
  4. Add the garlic powder, and stir in the chiles, cream of mushroom soup, and the sour cream at this point.
  5. Remove about three-fourths of the sauce from the saucepan, and add your chicken and half a cup of the cheese into the remaining sauce.
  6. Fill your tortillas up with the chicken blend, and place them in the baking sheet.
  7. Combine the sauce you removed with your milk. You are going to pour this blend as evenly as possible over the tortillas. Be sure to top the entire thing with the remaining half of shredded cheese.
  8. Bake for about 30 to 35 minutes or until the cheese looks all bubbly and delicious.
  9. Serve and enjoy.
